A minimum of 12.5 pounds is required to make a batch of sausage. We specialize in venison but have also processed bear, goose, duck pheasant,elk moose and antelope.Ifthe meat is fresh or frozen and property trimmed, we can process it into a great tasting sausage. The mixture is fitty-fifty wild game and pork. Bring meat in a disposable container. Summer sausage batch requires 12.5 lbs meat, 12.5 lbs pork; can be split into 2 varieties Snack sticks batch requires 20 lbs meat, 5 Ibs pork Potato sausage requires 5 lbs meat for 40-lb batch All sausage is stuffed in natural casings, except summer sausage is stuffed into fibrous casings. Finished products are wrapped bulk-style unless white freezer paper is requested for an additional upcharge of 50 cents per pound. Sausage must be picked up within 48 hours after you have been notified your order is complete.
